Zuppa Toscana

Ingredients
  • 1 tbsp olive oil
  • 1 lb ground mild Italian pork sausage
  • 1 onion, finely diced
  • 3 garlic cloves, minced
  • 2 medium russet potatoes, peeled and cubed
  • 6 c chicken broth
  • 6 steaks of kale, finely chopped
  • 3/4 heavy cream
  • Shaved Parmesan
  • Loaf of crusty bread for dipping
Instructions
  1. Heat the oil in a large Dutch oven over medium high heat. Brown the sausage until fully cooked.
  2. Add the onions and garlic to the sausage. Sauté for 5-7 minutes until soft and fragrant.
  3. Add the potatoes and the broth. Simmer for 7-10 minutes, until the potatoes are tender.
  4. Add the kale and heavy cream. Simmer for 5 minutes until kale has wilted.
  5. Season with salt and pepper and top with Parmesan.
