A Damn Delicious, this slow cooker meal brings together tender chicken, creamy potatoes, and crisp broccoli in a rich, comforting sauce. It’s an easy, all-in-one dish that’s full of flavor and perfect for a cozy dinner.

Ingredients

  • 6 boneless, skinless chicken thighs
  • 1½ teaspoons smoked paprika
  • Salt and pepper, to taste
  • 1 tablespoon unsalted butter
  • 900 g baby red potatoes, halved
  • ¼ cup white wine
  • ¼ cup chicken stock
  • 2 shallots, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 3 cups broccoli florets
  • ½ cup low fat cooking cream
  • 1 ½ tablespoons freshly squeezed lemon juice
  • 1 tablespoon cornstarch

Instructions

  1. Season the chicken with smoked paprika, salt, and pepper.
  2. Add the halved potatoes to a slow cooker. Stir in the wine, chicken stock, shallots, garlic, and thyme. Season with salt and pepper.
  3. Arrange the chicken evenly over the potatoes.
  4. Cover and cook on low for 5 to 6 hours, or until the chicken is fully cooked. Add the broccoli during the last 30 minutes of cooking.
  5. Once done, remove the chicken, potatoes, and broccoli from the slow cooker and keep warm.
  6. In a small bowl, whisk together the cream, lemon juice, and cornstarch. Pour the mixture into the slow cooker.
  7. Cover and cook on high for 10 to 15 minutes, until the sauce thickens.
  8. Serve everything with the creamy sauce spooned over the top.
