Ingredients
- 6 boneless, skinless chicken thighs
- 1½ teaspoons smoked paprika
- Salt and pepper, to taste
- 1 tablespoon unsalted butter
- 900 g baby red potatoes, halved
- ¼ cup white wine
- ¼ cup chicken stock
- 2 shallots, finely chopped
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 3 cups broccoli florets
- ½ cup low fat cooking cream
- 1 ½ tablespoons freshly squeezed lemon juice
- 1 tablespoon cornstarch
Instructions
- Season the chicken with smoked paprika, salt, and pepper.
- Add the halved potatoes to a slow cooker. Stir in the wine, chicken stock, shallots, garlic, and thyme. Season with salt and pepper.
- Arrange the chicken evenly over the potatoes.
- Cover and cook on low for 5 to 6 hours, or until the chicken is fully cooked. Add the broccoli during the last 30 minutes of cooking.
- Once done, remove the chicken, potatoes, and broccoli from the slow cooker and keep warm.
- In a small bowl, whisk together the cream, lemon juice, and cornstarch. Pour the mixture into the slow cooker.
- Cover and cook on high for 10 to 15 minutes, until the sauce thickens.
- Serve everything with the creamy sauce spooned over the top.
