Slow Cooker Chicken and Rice Soup

Ingredients
- 1 lb boneless, skinless chicken breasts
- 6 cups chicken broth
- 1 cup long grain rice
- 2 carrots, diced
- 2 celery stalks, diced
- 1 onion, diced
- 2 garlic cloves, minced
- 1 tsp dried thyme
- Salt and pepper to taste
- 1 lemon, juiced
Instructions
- Add chicken, broth, rice, onion, garlic, thyme, carrots, celery, salt and pepper to taste to the crockpot.
- Cook on low for 6-7 hours or high for 3-4 hours until the chicken and rice are cooked through.
- Shred the chicken and stir in the lemon juice.
