Preheat your grill or skillet over medium-high heat.

While the grill is heating, divide the ground beef into 4 equal portions and shape them into patties, about ¾ inch thick. Make a slight indentation in the center of each patty to prevent it from puffing up during cooking.

Season both sides of the patties generously with salt and pepper.

Place the patties on the grill or skillet. Cook for about 4-5 minutes on one side, then flip them over.

Place a slice of cheddar cheese on each patty after flipping. Cook for another 4-5 minutes, or until the cheese is melted and the patty reaches your desired doneness (160°F for medium).

While the burgers are cooking, toast the hamburger buns on the grill or in a toaster until golden brown.

Assemble the burgers by placing a cooked patty on the bottom half of each bun. Top with lettuce, tomato slices, onion (if using), ketchup, and mustard. Cover with the top half of the bun.
