Preheat the oven to 400°F (200°C).

In a blender or food processor, combine roasted red peppers, minced garlic, olive oil, Italian seasoning, salt, and pepper. Blend until smooth to create a marinade.

Place the chicken thighs in a large bowl or zip-top bag and pour the marinade over them. Make sure the chicken is well coated. Marinate for at least 15 minutes, or up to 2 hours in the refrigerator for more flavor.
