A delicious and easy-to-make apple pie baked in a cast iron skillet, perfect for any dessert lover.
Ingredients
- 2 pounds Granny Smith apples
- 2 pounds Braeburn apples
- 1 teaspoon ground cinnamon
- 1/2 cup granulated sugar
- 6 tablespoons butter
- 2/3 cup light brown sugar
- 1 (14.1-oz.) package refrigerated piecrusts
- 1 egg white
- 1 cup cranberries
- 1/2 cup raisins
- Zest of 1 lemon
Instructions
- Preheat oven to 350ºF (175ºC), with the pan and butter. Once melted add brown sugar, mix and preheat pan until mixed thoroughly.
- Mix 1/2 cup granulated sugar and 1 teaspoon cinnamon together in large bowl, then add cranberries and raisins and lemon zest.
- Peel apples and cut into 1/2-inch-thick wedges. Toss apples with cinnamon, sugar, cranberries, raisins, and lemon zest.
- Remove from heat and place 1 piecrust in the skillet over the brown sugar mixture.
- Spoon the apple mixture over the piecrust, then top with the remaining piecrust.
- Whisk egg white until foamy in the large bowl with cinnamon sugar remnants. Brush the top of the piecrust with egg white. Cut 4 or 5 slits in the top for steam to escape.
- Bake at 350ºF for 1 hour to 1 hour and 10 minutes, or until golden brown and bubbly. Shield with aluminum foil during the last 10 minutes if necessary to prevent excessive browning.
- Cool on a wire rack for 30 minutes before serving. Serve with butter-pecan ice cream.
