Ingredients
- 4 cups (1-inch diced) fresh rhubarb (4 to 5 stalks)
- 4 cups fresh strawberries, hulled and halved, if large
- 1 cup sugar
- 1 1/2 teaspoons grated orange zest
- 1 tablespoon cornstarch
- 1/3 cup freshly squeezed orange juice
- 2 Perfect Pie Crusts, recipe follows
- 1 egg beaten with 1 tablespoon milk or cream, for egg wash
- 12 tablespoons (1 1/2 sticks) very cold unsalted butter
- 3 cups all-purpose flour
- 1 tablespoon sugar
- 1 teaspoon kosher salt
- 1/3 cup very cold vegetable shortening, such as Crisco
- 1/2 cup ice water
