Shrimp and Rice is a delicious weeknight dinner flavored with buttery shallots and garlic.
Ingredients

  • 1 medium shallot, finely chopped
  • 5 medium cloves garlic, minced
  • 1/2 tsp. red pepper flakes (optional)

  • 1 1/2 c. long grain white rice (such as jasmine or basmati), rinsed until water runs clear
  • 1/2 c. dry white wine
  • 2 3/4 c. chicken stock
  • 1 lb. 16/20 shrimp, peeled and deveined
  • 1 tsp. lemon zest
  • 1/2 lemon, juiced
  • 1/4 c. chopped fresh parsley
