A traditional Lebanese stew of Moghrabieh pearls also known as “Lebanese Couscous,” along with chicken, chickpeas and pearl onions served with a warm cinnamon and caraway spiced chicken broth.

Ingredients

  • 1 whole Chicken (2-3lb.)
  • 2 cups Dry Moghrabieh
  • 1 can Chick Peas (15.5oz)
  • 2 cups Pearl Onions
  • 2 tb. Vegetable Oil
  • 2 tb. Butter
  • 2 tsp. Caraway
  • 1 tsp. Ground Cinnamon
  • 1 tsp. Seven Spices
  • 1 tsp. Ground Cumin
  • 2 tsp. Salt
  • ½ tsp. Black Pepper
  • 8 cups Water
  • 1 Cinnamon Stick
  • 2 Bay Leaves
  • 1 tsp. Whole Cloves
  • 1 tsp. Salt
  • ½ tsp. Black Pepper
