Here we’ve created a rich and creamy filling using soft cheese and dill to flavour the fish from the inside out

Ingredients

  • 150g spinach
  • 1 garlic clove crushed
  • ½ dill
  • garlic and herb soft cheese (we used Boursin)
  • 1 lemon zested and halved
  • ½ side of salmon (about 600g)
  • 2 tbsp olive oil
  • new potatoes, fennel salad or steamed greens to serve
