Ingredients
- 4 bone-in, skin-on chicken thighs
- 2 roasted red peppers (jarred or homemade)
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- In a blender or food processor, combine roasted red peppers, minced garlic, olive oil, Italian seasoning, salt, and pepper. Blend until smooth to create a marinade.
- Place the chicken thighs in a large bowl or zip-top bag and pour the marinade over them. Make sure the chicken is well coated. Marinate for at least 15 minutes, or up to 2 hours in the refrigerator for more flavor.
- Arrange the marinated chicken thighs on a baking sheet, skin side up.
- Roast in the preheated oven for 35-40 minutes, or until the chicken is cooked through and the skin is crispy, reaching an internal temperature of 165°F (74°C).
- Remove from the oven and let rest for 5 minutes. Garnish with fresh parsley if desired and serve.
