- 4 c. low-sodium chicken broth
- 1 lb. baby golden potatoes, halved
- 3 medium carrots, peeled and cut into 1-inch chunks
- 2 medium parsnips, peeled and cut into 1-inch chunks
- 1 c. heavy cream
- 1 tbsp. chopped fresh parsley, plus more for serving
