  • 1 TBSP olive oil
  • 3 cloves minced garlic
  • 2 TBSP unsalted butter
  • 1/2 package baby bella mushrooms, sliced
  • 1 cup light cream
  • 1 cup (unsweetened) pumpkin puree
  • 1 cup grated parmesan cheese
  • 1/4 tsp nutmeg
  • 1 TBSP fresh minced thyme
