- 3 quarts water (reserve after cooking the pasta)
- 8 ounces fettuccine
- 1 TBSP olive oil
- 3 cloves minced garlic
- 2 TBSP unsalted butter
- 1/2 package baby bella mushrooms, sliced
- 1 cup light cream
- 1 cup (unsweetened) pumpkin puree
- 1 cup grated parmesan cheese
- 1/4 tsp nutmeg
- 1 TBSP fresh minced thyme
